Chinese Chicken Lettuce Wraps

Hi guys! I hope your day is going well! I made chicken lettuce wraps for the second time EVER, and it was even more delicious this time! This dish tastes so SO SO SO good and I encourage you to give it a try. I got the recipe from Chef John, so check him out if you want more details about his recipe! LET’S GET STARTED!

INGREDIENTS:

  • Iceberg lettuce

For chicken mixture:

  • 1 lb ground chicken (or you could cleaver your own chicken thighs)
  • 1 cup mushroom minced (shiitake or baby bella)
  • 1 8 oz. can of water chestnuts, drained and minced
  • 1/3 cup chopped green onion
  • 1/2 cup chopped onion
  • 1 tablespoon grated ginger
  • 1 tablespoon soy sauce
  • 2 teaspoons brown sugar

Glaze

  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce
  • 2 teaspoons brown sugar
  • 2 teaspoons sesame oil
  • 1/4 cup chicken stock
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon red chili flakes
  • Cayenne pepper (optional)
  • 1/2 teaspoon mustard powder or Asian mustard
  • 1/4 cup white rice vinegar

Other:

  • 1/4 cup (total) chopped cilantro and green onions
  • 2 tablespoons vegetable oil

INSTRUCTIONS:

  1. Add chopped mushroom, water chestnuts, chicken, green onion, onion, ginger, soy sauce, and sugar to a bowl and mix well
  2. Mince

  3. Cover and set in the refrigerator until needed
  4. Mix well, cover, then fridge

  5. Whisk together all the ingredients for the glaze

  7. Heat a large fry pan on high with 2 teaspoons of vegetable oil
  8. Add the chicken mixture and fry for 5 minutes
  9. The mix will look mushy at first. Make sure your heat is high

  10. Add 1/2 of the glaze and let fry on high for about 15 minutes until the mixture starts to caramelize
  11. The mixture is caramelized! Lower your heat to medium/low, add the rest of your glaze, and cook for a few minutes

  12. Add the rest of the glaze and cilantro/green onions, and lower heat to medium/low
  13. Add in your cilantro and green onions

  14. Mix through well for a couple minutes
  15. Plate and ENJOY!!
