Hummus Pasta

Hello hello!

I hope you have been having a WONDERFUL day so far! If you’re looking for a healthy and quick recipe, this is definitely for you! This pasta is seriously delicious and does not take long to make!

Before trying this dish, I thought pasta and hummus was a weird combination, but it’s actually so simple and yummy! Give this a try, you won’t regret it. 🙂

INGREDIENTS: For 2 servings

  • Hummus (I use half of a container for 2 servings or 3 1/2 oz)
  • Pasta noodles (I used thin whole wheat spaghetti noodles so that it would be a little healthier!)
  • 2 Roma tomatoes diced
  • 1/2 tbsp minced garlic
  • Salt
  • Pepper
  • 1 tsp Olive oil
  • Parmesan cheese
  • Red pepper flakes (optional)
  • 1 tsp minced cilantro (optional)
  • 1 Stalk green onion chopped (optional)

INSTRUCTIONS:

  1. Boil the pasta noodles according to the directions on the package (mine took about 8 minutes to boil). Make sure you reserve some salted pasta water

  3. Put the fry pan on medium low and add the olive oil, garlic, a pinch of salt, and red pepper flakes. Leave for 1 minute, stirring often so that the garlic does not burn

  5. Add tomatoes and cook for 4 minutes while it softens
  6. Add your hummus and 1/3 cup of your salted pasta water. Taste for seasoning and add salt if needed
  7. Mix well

  8. Once your pasta is done cooking, add the “sauce” to the drained pasta noodles
  9. Mix and add cilantro, green onions, and parmesan (optional step)

BTW, this is a great dish to make ahead of time and keep in the fridge. I like to make it for the next day’s lunch or something when I know I’m going to be busy. Just keep the sauce separate from the pasta noodles and mix together over the stove when you want to eat it! Make sure you drizzle a little bit of olive oil over the noodles so that they don’t stick in the fridge.
