Hello, and sorry I haven’t posted in awhile!
I wasn’t going to post this one since I didn’t want to write out the recipe, but it’s really delicious and healthy! I’m just going to post pictures so that you can see the different ingredients I used. 🙂
Sweet red peppers
Portobello mushrooms with gills scooped out to make it less watery
All ingredients with pepper, salt, chopped red onion, cilantro, balsamic vinegar, and lemon juice
Added spinach at the last moment because I thought it would be a good addition of fiber and color!
Ready to bake with a sprinkle of parmesan and mozzarella
