Smoked Salmon Potato Cakes

MmmMMMMm. It’s SOOOO creamy and cheesy and delicious. It doesn’t require too many ingredients and it’s pretty easy to make, but the taste is unbelievable! Give it a try!

I got the inspiration to make this from Sorted, a YouTube channel. They make the same thing with a few different ingredients, so if you want to check them out, click here! I added a few things and changed a bit of the ingredients to what I had access to, but the idea is the same. 🙂

INGREDIENTS: 2 potato cakes

  • 1 or 2 large russet potatoes
  • lemon
  • smoked salmon
  • 2 eggs
  • butter
  • salt
  • pepper
  • cayenne pepper
  • chives or green onions (my grocery store didn’t have chives so I got green onions)
  • 2 tablespoons sour cream (optional)
  • handful sharp cheddar cheese (optional)

INSTRUCTIONS:

  1. Peel and chop the russet potatoes into small chunks and boil in water with a teaspoon of salt for 15 minutes

  3. Slice smoked salmon into strips

  5. Chop chives/green onions
  6. Drain the potatoes and mash
  7. Add the cheese to the mashed potatoes while it is still hot and mix well

  8. Add the sour cream, chives/green onions, and smoked salmon to the mashed potatoes and mix well with hands
  9. Form the potato mash into large flattened balls and let cool

  11. Put a knob of butter in a fry pan and once the butter has started to foam, place as many potato cakes that will fit on the pan and let them cook for a couple-few minutes until lightly crisp
  12. Flip over potato cakes with tongs or a spatula (the potato cakes may be fragile so be careful!)
  13. Plate the potato cakes

  15. Poach enough eggs for each potato cake
  16. Place an egg onto each potato cake and sprinkle with cayenne pepper, pepper, and green onions
  17. ENJOY!! 🙂
