Asparagus Salad with Spam

I’ve actually never made anything with asparagus so I was a little worried, but this salad turned out amazing! Even those who don’t like vegetables would like this tangy dressing and crispy meat. I got this recipe from Chef John from FoodWishes, and used Spam instead of the pastrami he used. I also used less oil and vinegar. INGREDIENTS:

  • asparagus- as much as you want. Keep in mind that they shrink a bit once you mix it with the dressing so you should make more than you want to actually make. I used about 4-5 stalks for 2 people
  • 2 teaspoons dijon mustard
  • little more than 1/2 teaspoon brown sugar
  • 2 teaspoons rice vinegar
  • 2 tablespoons olive oil
  • salt
  • pepper
  • dash of cayenne (optional)

INSTRUCTIONS:

  2. Use a vegetable peeler to peel shreds of asparagus, holding onto the thicker side of the stalk

  4. Once you have as much as you want, add a dash of salt
  5. To make the dressing, mix together the dijon mustard, vinegar, and brown sugar
  6. After it has been mixed well, slowly add in olive oil while constantly stirring to emulsify your dressing. You should not have a separate layer of oil in the dressing
  7. When you are ready to eat, pour the dressing on to the asparagus along with pepper and cayenne pepper, and mix. You may not need all of the dressing so pour about half before you add more

  9. Cook your choice of meat (bacon, pastrami, spam, etc.) until slightly crisp
  10. Plate your asparagus salad and sprinkle with meat
  11. ENJOY!!
